Check out this receipt for high protein Carrot Cake Muffins! I was so happy with the way they turned out!
1.5 cups lupin flour
1.5 cups ground flax
2 cups plexus Lean (pumpkin spice or vanilla flavored. I used pumpkin)
1/4 cup chia
1 tsp cinnamon or more
1/2 tsp nutmeg
1/4 tsp cloves
6 eggs
1 cup brown sugar
1/2 cup stevia
2.5 cups unsweetened soy milk
1/2 cup oil
1/2 pound baby carrots grated (blender)Pour in large muffin tins
Sprinkle with sugar and whole flax seed Bake at 375 for 25 min.
