Protein Carrot Cake Muffins

Check out this receipt for high protein Carrot Cake Muffins! I was so happy with the way they turned out!

  • 1.5 cups lupin flour

  • 1.5 cups ground flax

  • 2 cups plexus Lean (pumpkin spice or vanilla flavored. I used pumpkin)

  • 1/4 cup chia

  • 1 tsp cinnamon or more

  • 1/2 tsp nutmeg

  • 1/4 tsp cloves

  • 6 eggs

  • 1 cup brown sugar

  • 1/2 cup stevia

  • 2.5 cups unsweetened soy milk

  • 1/2 cup oil

  • 1/2 pound baby carrots grated (blender)Pour in large muffin tins

Sprinkle with sugar and whole flax seed Bake at 375 for 25 min.
